RED MERLOT WINE
“Young but elegant”
Vinification: The grapes grow in organic crops, harvested by hand and selected in the field. After two days of pre-fermentative maceration at 15°C, the alcoholic fermentation takes place with selected yeast in a controlled environment between 22° and 25°C. Malolactic fermentation is spontaneous and towards May, a delicate filtration is performed before bottling. Alcohol content 14.5% vol.
Tasting notes: Visually its intense cherry color stands out, bluish and gray reflections that show the youth of this wine. In the nose, it reminds of red fruits, prunes and licorice. In the mouth the appearance of aromatic herb notes and the red fruit are blended with a young tannin that brings structure that foresees (if kept in optimal conditions) a positive evolution for at least four years in bottle.

Pairing: Semi-firm sheep or cow cheeses, pastas made especially with tomato sauce, chicken, pork or rabbit stews, beans with sausage and clotxa, an autochthonous dish from the region.
